Guacamole - Mortar & Pestle

This is optional, I just love garlic! Drop 2-4 peeled cloves of garlic into your mortar. Sprinkle in a pinch of kosher salt. Using the weight of the pestle, smash the garlic roughly using up-and-down motions. Next use circular motions to grind the garlic into a paste.
Chop half of a small onion and a small tomato. Take a 4-finger pinch (don't over-do it) of the chopped onion and drop it in with the garlic. Set the rest aside for later. Grind the onion into the garlic paste. Stop crying, this is going to be delicious! Add a handful of fresh cilantro (or skip it if you want). Grind the cilantro in with the garlic and onion. Squeeze half a lime in and grind it all together until well mixed. Make sure to knock down any paste that clings to your pestle.
Cut your Avocado(s) in half. Whack a knife into the pit and turn the knife until the pit releases. Use a spoon and carefully scrape out the flesh into the mortar. Use up-and-down motions to roughly smash the avocado. Gently mix the paste into the avacodo.
Add a little more chopped onion and tomato. Squeeze in more lime juice. Gently fold it all together until well mixed. Try it on a chip and salt to taste. Now, if you want, you can cry.
